Chocolate Chunk Pecan Cookies

Cookies, cookies, cookies. I can never get enough of cookies. I bake them all the time and will never ever say no to a cookie. I eat them (and crave them) all the time too. Sometimes if the cravings get desperate, I’ll even buy them from the supermarket bakery. Or from subway. Please don’t tell anyone.

This recipe is another one of my favourites for cookies (they all seem to be my favourite, don’t they?). They are fat and thick and chewy. With this recipe, I discovered the deliciousness of chocolate and toasted pecans together. They inspired me to make a chocolate pecan pie. These cookies don’t even really need that much chocolate. The melt-in-your-mouth, buttery pecans inside the perfectly chewy cookies is a party in your mouth. Party, party, party. Let’s bake.

CHOCOLATE CHUNK PECAN COOKIES
This recipe is adapted from Jill O’Connor’s Sticky, Chewy, Messy, Gooey. Toast the pecans for 6 minutes at 200 C, until fragrant. And please don’t overbake these cookies because they turn cakey.

110g unsalted butter
3/4 cup firmly packed dark brown sugar
3/4 cup white sugar
1 tsp salt
2 eggs
2 1/4 cups plain flour
1/2 tsp baking soda
1/4 tsp baking powder
200g milk or dark chocolate block, chopped (2 cups)
2 cups pecan halves, toasted, cooled and roughly chopped

Melt the butter in a large ceramic mixing bowl in the microwave. Using a wooden spoon, mix both the sugars into the butter until well combined. Stir in the salt and add the eggs, one at a time, mixing well after each addition, until smooth.

Mix in the flour, baking powder and baking soda until just combined. The dough will be quite runny because of the warm melted butter. Allow it to cool and it will firm up. Add the chopped chocolate and pecans.

Roll large tablespoon-sized balls of dough and place on a tray lined with baking paper. Refrigerate for an hour. Preheat the oven to 180 C towards the end of the chilling time.


Bake the cookies for 12-15 minutes, depending on their size. The edges should be golden and the centres just a little soft. Allow the cookies to cool slightly on the trays before transferring to wire racks. Makes 32 cookies.
