On Tuesday I made whoopie pies. My first batch of the cakes/cookies/whoopies was an absolute dry, cakey disaster. So I was left with 20 dry pieces of chocolatey cake/cookies. What to do with them?
Inspiration struck (when they tasted good after they soaked up all that gross melted BabyCakes frosting). I was going to turn them into cookies and cream ice cream. Only whoopie pie ice cream!
The result? Fantastic. Like cookies and cream, but with tons of cookie parts. Like having Oreos crushed up in your ice cream, but without the crunch. The whoopie soaks up the ice cream and blends in with the texture and its just great.

If you were looking for an ice cream recipe, unfortunately you have come to the wrong place. This was a quick-fix solution and not the time to create more kitchen hysteria by messing with making ice cream from scratch. But it is good, I promise.
1 tub of your favourite vanilla ice cream
1 batch of whoopie pies (without any filling)
Take the ice cream out of the freezer and let it soften for about half an hour to an hour, depending on the weather. Break up the whoopie pies into bite-size pieces.
In a large mixing bowl, layer ice cream, then broken whoopie pies, then ice cream and so on.
Give it all a good mix and transfer it back into the ice cream tub. Let it set for an hour or so and enjoy!
