Chocolate Chip Coffee Bars

I was going to make oreos today. Until I saw these on Bakergirl’s gorgeous blog.

Um… YUM.

Her promise that it is like eating a “chocolate chip cookie dough frappucino fudge sheet cake” (along with her pictures of that fudgy-looking goodness) had me hooked in seconds.

Goodbye oreos.

Hello chocolate chip coffee bars.

All I can say is yum.




They are so good. Chewy. Fudgy. Crumbly. Short. Coffee flavoured. Chocolatey. Doughy. Like cookie dough crossed with pie crust crossed with coffee.

They smell fantastic while they are baking. And they taste even better.

220g unsalted butter, softened (1 cup)
1 cup light brown sugar
1 tsp vanilla extract
1 tbsp instant coffee
2 cups plain flour
1 tsp salt
1/2 tsp baking powder
1 tsp cinnamon
1 cup chocolate chips (I used a mixture of milk and dark and it was great)

Preheat the oven to 190 C and line a 9 x 13 inch baking pan with parchment paper (or grease it).

Bash up your coffee in a mortar and pestle (or something) so its nice and fine (important! Otherwise you’ll end up with bitter lumps of coffee).

Put the coffee, butter, sugar and vanilla in the bowl of your electric mixer and beat until combined and creamy.

Add the flour, salt, cinnamon and baking powder and mix on low until just combined. Add the chocolate chips and mix until incorporated.

Eat some dough. It has no eggs in it so you can eat it raw. Do it. Its YUM.

The mixture will be crumbly. Pour it all into your tray and press it flat with your hands.

Put it in the oven and bake for 5 minutes. Then rotate the tray 180 degrees and bake for a further 5-10 minutes, until it begins to turn golden.

Let the bar cookies cool in the pan before cutting into squares. Makes 20  bars.

I can’t stress enough how delicious these are. YUM. I wish you could smell them through the computer. And they only take 25 minutes from start to finish.

Go and make some. You’ll be glad you did.

    this is such a great recipe because it’s so quick – and you’re right about the smell, amazing! When I bake this instead of using chocolate chips I normally chop up a bar of Whittakers Whole Hazelnut Chocolate for a bit of added nutty flavour – yum!
