
These are the easiest things you will ever make.
Seriously.
Yes, you read right. Three.
You mix everything together in a bowl with a spoon, then you roll the dough into balls and 10 minutes later you have hot cookies.
See? Easiest things ever.
Huh? Yeah I know.
When I first saw the recipe I was like “What? How do they stick together and end up so thick?”
But it works. Somehow.

The texture is crumbly. The cookies melt in your mouth, in a similar way to shortbread. But they are softer.
You can add chocolate chips to them if you like, or even dip them into melted chocolate (yum!), but here I have made them plain, simple and easy.

FLOURLESS PEANUT BUTTER COOKIES

375g peanut butter, smooth or crunchy
3/4 cup white sugar
1 egg
Preheat the oven to 180 C and line 2-3 baking trays with parchment paper.
In a bowl, mix together the peanut butter, sugar and egg with a wooden spoon until combined and thick.
Roll large teaspoons of dough into balls and place on baking trays. Flatten them with your palm or a fork.
Bake for 10-12 minutes. Allow to cool on trays completely as they are delicate when hot. Makes 24 cookies.
EASY.
I highly recommend slathering these in Nutella.

Or turning them into peanut butter and Nutella sandwich cookies. Yum!
