Cookies and Cream Bars

Oreos have always been really popular in my household.

Cookies are a definite hit too.

And combining the two together here quickly resulted in lots of crumbs and no cookies. Delicious.

So I thought I’d take some vanilla cookie dough and layer it up with Oreos. Yeah.

The thing about bars, is that because they are so big (compared to a cookie), they tend to be much chewier and gooeyer, especially through the middle. Which is awesome.

So this recipe results in a chewy cookie base, with a layer of textured, slightly crunchy Oreo, then the gooey Oreo filling, then more Oreo, then another layer of chewy vanilla cookie with a slightly crisp, golden brown cookie top.

They disappeared within a day. One day. And they were all gone.

Nom nom nom.

I should change the name of this blog to Cookie Monster.

Cookie dough inspired by Milk and Cookies.

330g unsalted butter, softened (1 1/2 cups)
1 cup white sugar
1 cup brown sugar
2 eggs
1 tsp vanilla extract
4 cups plain flour
1 tsp baking soda
1 tsp baking powder
1 1/2 tsp salt
30-40 Oreos

Preheat the oven to 180 C and line a 9 x 13 inch tray with baking paper.

Using an electric mixer, beat the butter and sugars until light and creamy. Add the eggs, one at a time, beating well between each addition. Beat in the vanilla.

On a low speed, mix in the plain flour, baking powder, baking soda and salt until incorporated.

Spoon about half of the cookie dough into the prepared baking tray. Try to use the back of a spoon to spread it out evenly, but if that fails, just use your hands to press it down into an even layer.

Line the Oreos up over the cookie base, right next to each other, so its entirely covered.

Drop tablespoons of the remaining cookie dough over the Oreos. Press the dough down flat. It doesn’t have to cover the Oreos entirely.

Bake for 18 minutes, until lightly golden. Allow to cool slightly before cutting. Makes 20 bars.

  2. Hey I’m making them now at this moment , is it normal that in the oven after 18 min the Dow is still like sticky texture and like not hard ?
