Nutella and I are old friends. We go way back.
For as long as I can remember, there has been a jar of Nutella in the pantry at my house.
My family has long shared germs as we pass the Nutella jar around and we each eat it with a spoon with the milk bottle nearby.
When I was young, my mum would put those little individual packets of Nutella in my lunchbox.
And I love the smell of Nutella when you open up the jar. It’s heaven.
My Nutella filled cookies and my Nutella cookie cups were a hit, so I thought it would be fitting to make some Nutella and cookie bars.
These bars are just basic vanilla cookie dough with swirls of Nutella through them. Look at how chewy they look.
Chewy, soft cookie. Gooey, chocolatey, smooth Nutella.
Match made in heaven.
NUTELLA COOKIE BARS
Adapted from Milk and Cookies.
220g unsalted butter, softened (1 cup)
3/4 cup white sugar
3/4 cup brown sugar
1 egg
1 egg yolk
1 tsp vanilla extract
3 cups plain flour
3/4 tsp baking soda
3/4 tsp baking powder
1 1/2 tsp salt
1 jar Nutella (you won’t need the whole thing)
Preheat the oven to 180 C and line a 9 x 13 inch tray with baking paper.
Beat the butter and sugars together until light and creamy. Add the egg, egg yolk and vanilla and mix well.
On a low speed, mix in the flour, baking soda, baking powder and salt until just incorporated.
Spread the mixture evenly into the prepared tray.
Dollop 6-8 tablespoons of Nutella over the cookie base. Use a spoon or a metal skewer to spread it and swirl it around and into the cookie.
Bake for 18-20 minutes. Allow to cool slightly before cutting. Makes 20 bars.
