Chocolate Pistachio Dream Cookies


These cookies are not called “dream cookies” because they are dreamy or heavenly (not that they aren’t good!).

These cookies are called “dream cookies” because the idea for them was born in a dream.


Confused? The story goes like this:

One day, my friend, lets call him A, had a dream that he ate some cookies. Then he sent me a Facebook message that said -

“Omg! I just had another stalk of your blog. I’m hungry! If you ever have the time – once I had a dream that I ate a dark chocolate chip and pistachio cookie – there was hints of honey and a tad of cinnamon in them.. they were amazing! Well in the dream they were.. if you ever want to make them for me.. well then yeah I guess I’ll die… and love you forever..”


And I made them. Minus the honey. Because honey + chocolate? No thanks.

So there you have it. The chocolate pistachio dream cookie was born.


And A didn’t die when he received a big bag of cookies, but he did write this:

“Only one friend in the world would make me cookies that I actually dreamed of. Salivating over my double choc, pistachio and cinnamon doughy cookies! Love”.

How sweet of him!

 


CHOCOLATE PISTACHIO DREAM COOKIES

Inspired by Love from the Oven.

This recipe calls for pistachios. Either take the shells off or buy them without their shells then roast them in a 180 C oven for about 6 minutes until fragrant. It brings out their flavour and results in a much crunchier nut.

220g unsalted butter, softened (1 cup)
1 cup white sugar
1/4 cup brown sugar
2 eggs
1/2 cup cocoa
2 1/4 cups plain flour
2 tsp cinnamon
1 tsp salt
1 tsp baking powder
2 cups chocolate chips
1 cup pistachios, roasted and roughly chopped

Preheat the oven to 180 C and line a few trays with baking paper.

Using an electric mixer, beat the butter and both sugars until light and fluffy. Add the eggs, one at a time, and beat well after each addition.

Beat in the cocoa.

Add the flour, cinnamon, salt and baking powder and mix on a low speed (or by hand if you don’t have a paddle attachment on your mixer) until incorporated.

Mix in the chocolate chips and pistachios.

Roll large teaspoons of dough into balls and place them onto the baking trays. These don’t spread very much so you don’t need to leave a lot of space between them.

Flatten each ball of dough with the palm of your hand and bake for 10 minutes, until just set. Makes 60 small cookies.
