Mars Bar Stuffed Chocolate Chip Cookie Cups


My brother is the brain behind these babies.

I think I have a new found love for him now.


He’s a kid, only 13, in his first year of high school. He has a massive sweet tooth, loves his chocolate and is always asking me to bake him these.

Sometimes, he comes up with a brilliant baking idea of his own, like this one.


On a recent Sunday afternoon, I was baking something or the other in the kitchen, and he goes, “Hey Tash, do you think you could like, put Mars Bars in cookies? But like, keep them whole? And like, do something so the cookies stay thick around the Mars Bars?”.

What a genius.


First I thought cookie bars. Then I remembered how much I love thick cookie cups. So I decided to bake them with a fun size Mars Bar inside.


They are fantastic! The chocolate melts and the caramel melts and the nougat goes gooey, and there’s cookie, and there’s melted chocolate chips and the whole thing is going to blow your mind.

So go and bake some.


MARS BAR STUFFED CHOCOLATE CHIP COOKIE CUPS
Cookie dough adapted from Meg Cabot’s Boy Meets Girl.

You will have a little cookie dough leftover after making this recipe, but just roll some tablespoons of dough into balls, pop them onto a lined baking tray and bake them for 8-10 minutes.

220g unsalted butter, softened (1 cup)
1 cup brown sugar, packed
1/4 cup white sugar
1 egg
1 tsp vanilla extract
2 cups + 3 tbsp plain flour
3/4 tsp baking powder
1/3 tsp baking soda
1 tsp salt
1 cup chocolate chips
12 fun size Mars Bars

Preheat the oven to 180 C and line a 12-hole muffin pan with cupcake liners.

Using an electric mixer, beat the butter until smooth. Add the brown sugar, white sugar, egg and vanilla extract and beat until well blended.

In a separate bowl, combine the plain flour, baking powder, baking soda and salt.

Pour half the flour mixture into the butter mixture and beat on a low speed until just combined.

Mix in the remaining flour mixture and then the chocolate chips by hand, being careful not to over mix.

Scoop a small tablespoon of dough into each cupcake liner and flatten into the base. Top with a fun size Mars Bar.

Top each Mars Bars with a medium scoop or large tablespoon of cookie dough. Flatten slightly.

Bake for about 12 minutes, until lightly golden. Makes 12 Mars Bar cookie cups.
