Healthy Chocolate Chip Cookie Pie

So this is me trying to be healthy.

All the bread and petit fours I have been baking in my course, all the pretzel chocolate chip peanut butter truffle brownies I have been eating and all the procrastinating I have been doing has been making me feel a little heavy.

So much so, that I was even inspired to go for a run recently.

So instead of going on a diet like a normal person, and not baking for a while (which I couldn’t possibly do, because then I would have nothing to blog about), I made healthy chocolate chip cookie pie.

It is still full of sugar so I wouldn’t advise you to eat it if you are on some sort of actual diet. But it has like, lots of beans in it, which means like, lots of protein, so that has to count for something, right?


I’m liking the pulses-in-baked goods thing at the moment. I’m obsessed with these healthy cookie dough balls and loved these bean brownies.

And this pie is really easy to make. Like, a “throw everything in a food processor and turn it on” kind of affair. The chocolate chips even make it taste like real cookie!

2 cans white beans, drained and rinsed (500g, 18 oz, total once drained)
1 cup quick oats
1 1/2 cups brown sugar
1/4 cup applesauce
3 tbsp vegetable or canola oil
2 tsp vanilla extract
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup chocolate chips

Preheat the oven to 180 C (350 F). Grease and line a 10 inch spring form tin with baking paper.

Put all the ingredients except the chocolate chips in a food processor and blend very well, until very smooth.

Stir in the chocolate chips and pour the mixture into the prepared pan.

Bake for 35 – 40 minutes, until the center is set. Allow to cool a little before cutting. Serves 10.

  1. You must have read my mind…I was just looking at recipes for chocolate chip cookies in a skillet and thinking “gosh, that’s a lot of butter and sugar”. Not that there’s anything wrong with butter and sugar, but it’s nice when you can feel good about eating dessert…will have to pick up some white beans so we can try this! We loved the black bean recipe :)
