Basic Sweet Pastry
 
 
Ingredients
  • 1½ cups plain flour
  • ¼ cup caster sugar
  • pinch of salt
  • 125g unsalted butter, cold and cubed (4.5 oz, ½ cup)
  • 1 egg yolk
  • 2 tbsp cold water
  • ½ tsp vanilla extract
Method
  1. On a clean worksurface or in a large bowl (or in a food processor or stand mixer fitted with paddle attachment), place the flour, sugar, salt and cubed butter.
  2. Crumble the butter into the dry ingredients with your fingertips (or pulse in a food processor/ mix on a low speed with a stand mixer fitted with paddle attachment) until the mixture resembles coarse breadcrumbs.
  3. Make a well in the center and add the egg yolk, cold water and vanilla.
  4. Slowly mix into the dry ingredients, using your hands, until a dough forms.
  5. Do not knead the dough, but rather bring it together to form a ball.
  6. Wrap in plastic wrap and refrigerate for at least an hour, preferably for 3.
  7. And there you have basic sweet dough! Makes one small pie, but the recipe can easily be doubled to make a bigger pie or for a thicker crust.
