CHOCOLATE CHIP BISCOFF STREUSEL MUFFINS
 
 
Ingredients
  • FOR THE MUFFINS
  • 2 cups plain flour
  • 1 cup Biscoff cookie crumbs
  • ½ cup sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 cup milk
  • ⅓ cup vegetable oil
  • 1 egg
  • 2 tsp vanilla extract
  • 1 cup chocolate chips
  • FOR THE STREUSEL
  • ¼ cup Biscoff cookie crumbs
  • ¼ cup plain flour
  • ¼ cup brown sugar
  • 3 tbsp unsalted butter, melted (45g)
Method
  1. Preheat the oven to 200 C (400 F) and line a 12 hole muffin tin with cupcake liners.
  2. To make the muffins, combine the flour, Biscoff crumbs, sugar, baking powder and salt in a large bowl and set aside.
  3. In another large bowl, whisk together the milk, vegetable oil, egg and vanilla.
  4. Add the dry ingredients into the wet ingredients and mix until just combined. Stir in the chocolate chips.
  5. To make the streusel, mix together the Biscoff crumbs, brown sugar and flour in a small bowl. Add the melted butter and stir until combined.
  6. Fill each cupcake liner ¾ full of muffin batter. Top with about a tablespoon of streusel.
  7. Bake for 16 - 18 muffins, until a toothpick inserted comes out clean. Makes 12 muffins.
