So I feel like lately I’ve been bombarding you with chocolate. And chocolate. And MORE chocolate. If there is anyone out there who doesn’t like chocolate (umm… if you do actually exist, how are we friends?) and is possibly complaining, then this one is for you. But it is also for the chocolate lovers. Because this is quite possibly better than chocolate. OhmygoshdidIreallyjustsaythat?! Yes. I did. I first made this … Continue reading →

Chocolate Peanut Butter Baked Cheesecake
Alright. So how do you deal with making big decisions? Do you take the plunge and just do the life-changing thing? Or do you shy away from things that put you out of your comfort zone? Do you sit down and write a list of the pros and cons involved with your decision? Or do you just go with your gut? Do you talk about your feelings and your options with loved … Continue reading →
Creme Brûlée
So, about a year ago, I sat down and wrote a list of goals for 2012. It was a spur of the moment thing, I’m not even sure what motivated me to do it, and the list was just quickly tapped into my iPhone notes. I then proceeded to immediately forget all about it. Completely. I didn’t think about it again. Not once. Until a month or so ago that … Continue reading →
Chocolate Espresso Mousse
So I’m freaking out a little. It’s coming to that time in my life when I am at a massive crossroads. A huge intersection. A junction. And. I. Am. Freaking. Out. In November, I will finish studying. I will officially be finished my Bachelor of Arts degree. And I will officially be finished my Patisserie course. I will no longer be a student. I will no longer be able to … Continue reading →
Strawberry and Apple Crumble
I have an announcement to make everyone. I am going to Europe again. Yay! If you’re a regular in these parts, you will know that last November I went on a trip to Paris then on to Poland to visit all my relatives. I must seriously have the travel bug as I’m going again so soon. A trip to Europe from Australia is no easy feat. It is about 30 … Continue reading →
Blueberry and Apple Crumble
Guess what! Georgia Blueberries have published a few of my favourite blueberry recipes on their website! I am so crazy excited to have some of my little blog recipes and amateur photos published on a site. They have posted up my Blueberry Cookies, Blueberry and Strawberry Pie, Blueberry Crostata and my Blueberry, White Chocolate and Macadamia Cookies. So to celebrate, here is another blueberry recipe. Crumbles are so great, because … Continue reading →
Pecan Caramel Tarts
I made these little babies at culinary school. They were one of my favourite desserts we’ve made all term. Right after these. The class is Hot and Cold Desserts and has been my absolute favourite so far. The teacher is amazing, an award winner in bread and pastry sculpture. He is much more relaxed and trusting than the other chefs, simply allowing us to go off and cook what is … Continue reading →
Strawberry Crumble
Autumn is here. It came quite suddenly, as soon as February finished. Just as summer was technically over, on the first day of March, I found autumn leaves at my back door. I am welcoming autumn, and winter, this year. Summer in Australia is hot, humid and disgusting. I don’t live near the beach and the sun here is too strong to lie in it for long anyway. So cooler … Continue reading →
Strawberries Baked in Kogel Mogel (Zabaglione)
For those of you who are regular readers, you will know that my mum’s side of the family are Polish and that we went to visit them at the end of last year. The food there was absolutely amazing. The dinners my uncle cooked. The desserts we all baked together. The pastries we bought at the bakery. Delicious, all of it. And I’ve been missing it, because the food here … Continue reading →
Polish Blueberry Cakes (Jagodzianki)
Today I am just sharing some photos with you. These little cakes are a traditional Polish pastry, called Jagodzianki (say ya-go-jan-ki). The name means blueberry cakes, or blueberry pastries. They are made from a basic Polish yeast dough and filled with blueberries. Most bakeries sell them, or some version of them, in Poland, but I have never had any as good as my mum’s. Bakeries tend to use blueberry jam … Continue reading →
