Polish Vanilla Slice (Karpatka)

This is Karpatka. Karpatka is like a polish version of vanilla slice, or millefeuille, only instead of the puff pastry, you have layers of choux pastry. Imagine one, big, rectangular profiterole filled with pastry cream. Yum! This is an absolute favourite of my mums, the polish dessert she likes the most. And I made it aaages ago for her, for mothers day, but I kind of forgot to post it. … Continue reading →

Polish Icebox Cake (Miodowiec)

When I finished high school, I worked hard for 6 months, did a quick English teaching course, packed my bags, sold my car and set off to live in Europe for a year. I had no idea what I was going to do for the whole year, so I started off in Poland (my entire family on my mother’s side are scattered around the country). I arrived on Easter Saturday, … Continue reading →

Polish Blueberry Cakes (Jagodzianki)

Today I am just sharing some photos with you. These little cakes are a traditional Polish pastry, called Jagodzianki (say ya-go-jan-ki). The name means blueberry cakes, or blueberry pastries. They are made from a basic Polish yeast dough and filled with blueberries. Most bakeries sell them, or some version of them, in Poland, but I have never had any as good as my mum’s. Bakeries tend to use blueberry jam … Continue reading →

Polish Strawberry and Apple Pie

This pie was so good. My uncle is a fantastic cook and when I was in Poland we talked about food a lot and he taught me how to make a few different Polish cakes. This was one of my absolute favourites. On our first day in my mum’s village, a neighbour came over with a big crate of apples. I thought we could use some of them up baking. … Continue reading →

Polish Pastries

I am in Poland in a little town where my mum grew up called Opole Lubelskie. In town in Opole, there is a bakery, or piekarnia, that you can smell from all the way down the street and around the corner. It smells delicious. Like fresh pastries and yummy, warm bread. When I lived in Poland, pastries and sweet rolls, along with pate and beer, were staples in my diet. These … Continue reading →

Strawberry Dumplings (Pierogi)

I’m in Poland, so I thought it would be fitting to make something Polish. These dumplings, or pierogi, are one of my absolute favourite Polish foods, and strawberry is probably my favourite pierogi filling. YUM. They are my Mum’s specialty. She makes the best pierogi I’ve ever had and I’ve eaten quite a few. They are entire restaurants here in Poland that just make pierogi and nothing else; lots and … Continue reading →

Poppy Seed Cake (Makowiec)

Hey! Guess what?! I’m going to Europe in LESS THAN TWO WEEKS! I’m going to Paris and Poland with my mum, to be exact. Paris is a stopover, just for a couple of days for some pastry eating and because I love the city. Poland for a month, to visit all of our family. I’m so excited, and I thought I’d make a traditional Polish cake to celebrate! My mum … Continue reading →

Polish Apple Pie Bars (Szarlotka)

So this is kind of a pie. And its kind of a crumble. Its also kind of bars. Szarlotka is Polish for apple pie. But this particular kind of Polish szarlotka is often made in a large square or rectangular tin and then cut into bars. The base is kind of like cake, something called biszkopt. Then there is a layer of deliciously soft apples (I tried to make extra … Continue reading →
